Her følger nogle tips til retter vi selv har nydt sammen med denne vin – og derfor varmt kan anbefale:
This fortified dessert Zinfandel is a powerful wine, with aromas of black cherry, cinnamon and chocolate. The palate is full, rich and luscious with lingering flavors of cocoa bitterness and caramelized figs. It’s sweetness balances the full body and the strength of the flowers which gives a big mouthfeel. The finish is long and intense.
Grapes were brought into the winery from our estate vineyard. They were then put on the vibratory sorting table where undesirable grapes, stems, and leaves were discarded. Grapes were then transferred to ferment and have a short cold soak before yeast was added to start fermentation. Part way through fermentation, high proof grape spirits were added to the fermenting juice to “arrest” or stop the fermentation. In doing this, we end up with a sweeter, dessert style wine with a 19% alcohol content. The wine was subsequently transferred to neutral oak barrels (no new oak was used) where it rested for until it was time to bottle it in June of 2020.
Vinverden er fuld af lovregler for at ”beskytte” de enkelte områders særkende. Men det betyder jo ikke, at vi ikke har en klar forventning omkring hvordan f.eks. en Chablis, Champagne, Cognac, Sherry eller – som her – Portvin smager, uanset hvorfra i verden vinen kommer!!!
Der er mange stilarter af portvine: Ruby, Tawny, Vintage, LBV, White, Rosé og Colheita. Denne vin er hvad vi kalder ”Lækker Vintage Stil”, lavet på 100 % Zinfandel. Sødmefuld, krydret, kompleks og fyldig med mange smagsoplevelser: Solbær, kirsebær og hindbær, kanel, karamel og chokolade – og med flot fedme. God balance mellem frugt og alkohol. Lang fløjlsblød finish.
